Pumpkin Pancakes – I’ve probably made these 200 times now. They’re a staple around here. She gives a few “options” in the recipe so I wanted to mention the ones I use. Instead of maple syrup or honey to sweeten, I mash a whole ripe banana. I also add 1-2 tbsp of coconut flour. I find that both of those options give them a great consistency and flavor.

Peach Pie Breakfast Bake – This is a bit labor intensive, but it makes a large amount so I felt like it was worth it. It’s delicious as well and more like a dessert than breakfast!

Strawberry Breakfast Cake – This is similar to the peach breakfast dish above, in that it takes a bit of time to make but will give you plenty of servings. It’s definitely more of a cake!

Super Easy Banana Bread – I’ve made this so many times now that I think I have the recipe memorized. It only takes about 5 minutes to throw together, is grain free and really tasty. You can also make it into muffins instead of a loaf.

Triple Coconut Pancakes – The best coconut flour pancakes I’ve eaten so far!
